This is a great summer salad and wonderful side to bring to a party! Easy. Healthy. Simple. 🙂

Ingredients
- 5 cups zucchini squash spiraled (then cut a few times so they are not so long)
- 1 cup grape or cherry tomatoes halved
- 1 orange bell pepper diced
- 1 yellow bell pepper diced
- 1 cucumber diced
- 2-3 cloves garlic minced
- 1/2 cup extra virgin olive oil (EVOO)
- 1/4 cup red wine vinegar
- 1 Tablespoon coconut aminos
- 1 teaspoon ground mustard
- 1/4 teaspoon sea salt
- 1/8 teaspoon ground black or white pepper
- 1 bunch cilantro chopped
- 5 strips bacon cooked crispy and chopped, optional

Instructions
- 1. Whisk together EVOO, vinegar, coconut aminos, mustard, salt, pepper, and garlic in a large bowl.
- 2. Add all the veggies and combine with a large spoon.
- 3. Refrigerate until ready to eat!
- 4. Top with cilantro before serving (and bacon, if using)
