  1. Pulse rolled oats in blender or food processor until coarsely ground.
  2. Whisk together dry ingredients (oat or almond flour, pumpkin pie spice, cardamom, ginger, cinnamon, baking soda).
  3. Add the rest of the ingredients to the dry mixture (pumpkin, vanilla, lemon, honey, eggs, unsweetened applesauce) and mix with spoon.
  4. Add about 1 TBS of oil to the pan. Use a ladle or scoop to place batter in pan for small pancakes. Cook for about 2-3 minutes on each side. Serve with fresh fruit & nuts and/or nut or seed butter (almond butter, cashew butter, sunbutter).
