Fresh Roasted Tomato Basil Soup

Fresh vegetables make this soup satisfying and extra delicious! If you don’t have fresh veggies on hand, a recipe with canned tomatoes and dried herbs is here.

  1. 1. Preheat oven to 350 degrees Fahrenheit.
  2. 2. Line baking sheet with aluminum foil, and spray with EVOO. Place tomato wedges and onions on baking sheet and brush with EVOO. Sprinkle with salt & pepper.
  3. 3. Cut the very top off of the head of garlic just to expose the cloves. Brush with EVOO, sprinkle with salt & pepper, and wrap in aluminum foil (exposed cloves facing up).
  4. 4. Place baking sheet with tomatoes and onions on a rack in the middle of the oven, and garlic next to it on the rack (or the sheet if there is room). Bake for 45 minutes.
  5. 5. Add all other ingredients to your Vitamix, or any blender if you do not have a Vitamix. When garlic, tomatoes, and onions are finished roasting, place them in the blender. For Vitamix: cover, turn to "hot soups" and wait until it shuts off. For other blenders, blend until smooth, and place in a pot on the stove. Cook on med-high heat until desired temperature.
  6. 6. Place in a bowl and eat!!
