Easy Tomato Soup
Especially easy if you have a Vitamix! But any blender works. If you have more time, fresh tomatoes, basil, and parsley, try this recipe!

Easy Tomato Soup
Instructions
1. Add 1 tablespoon EVOO or coconut oil to pan and turn heat on medium-high. Add onions, basil, parsley, salt, & pepper and cook until onions are translucent (about 3 min or so). Add garlic and cook about 1-2 more minutes. Turn off heat.
2. Place all the rest of the ingredients in the Vitamix and turn to "hot soups" and allow to blend until it turns off. If you do not have a Vitamix, add to the blender you have, and blend until smooth, then pour into pot and bring to desired temperature.
3. Pour into bowl, sprinkle with fresh or dried basil and/or parsley, and enjoy!
