Easy Chicken Curry

Put it in the crockpot and use it for dinners, lunches, even breakfast!

Instructions
  1. Place all ingredients except chicken in crockpot and stir (allow coconut oil to melt).
  2. Add frozen chicken, cover, and cook on low for 6-8 hours or high for 4 hours.
  3. After about 3 hours (you can wait longer if you are making this while you are not home), take chicken out and place in kitchenaid mixer to shred, or shred manually with a fork. Place back in crockpot and stir to combine with juices.
  4. Add shredded chicken back to crockpot and allow the juices and to soak into the chicken.
  5. Add celery and bell pepper, allow to cook for about another hour. Then add greens and stir to combine.
  6. Serve over salad, rice, zucchini noodles, cold in a wrap, or store in refrigerator for meals throughout the week!
