Crockpot Lentil Veggie Soup

This soup is easy to make, has anti-inflammatory properties, is packed full of nutrients, and is a hit in my family, including kid-approval!

  1. 1. Turn crockpot to high. Add the coconut oil.
  2. 2. While coconut oil is melting, sauté onions in a medium pan with olive oil and 2 tablespoons of veggie broth for about 3-5 minutes or until translucent.
  3. 3. Add all ingredients to crockpot except for kale. Add onions too.
  4. 4. Turn crockpot to low, and cook for 6-8 hours (alternatively, leave on high for 4-6 hours). I found that 8 hours on low worked really well! Add kale 15-30 minutes before serving.
