  1. Preheat oven to 400 degrees.
  2. Place quinoa and ½ cup water or broth in sauce pan. Bring to boil, then cover and simmer for about 10 min or until you can fluff it with a fork.
  3. Combine all ingredients with the ground turkey, including the quinoa. Mix really well, and then form lots of golf-ball size (1”) meatballs.
  4. Place meatballs on a cookie sheet (spray with coconut or extra virgin olive oil) & bake meatballs for about 20 minutes or until cooked through & no longer pink in the middle. DELISH!
